Herb Crusted Beef Tenderloin

Peel the fat cap off a six pound beef tenderloin and remove the side muscle and silver skin. Next, rub the tenderloin with 1 tablespoon of vegetable oil, so every part is lightly coated with a small amount of oil. Then, season the tenderloin with a mixture of 2T basil, 2T thyme, 2T kosher salt and 2.5T of ‘course ground’ black pepper. Roast the tenderloin on an elevated backing rack over a mixture of vegetables, in a pre-heated 300 degree oven for 14 minutes (for medium rare to medium). Let the tenderloin ‘rest’ for at least five minutes before slicing. Serve with Herbed Dijonnaise on small rolls.

Herbed Dijonnaise

Combine 1 cup of mayonnaise with 1/2 cup of Dijon mustard and whisk until incorporated. To finish, whisk in 1T(each) of freshly chopped parsley, oregano, thyme and basil. Season to taste with salt and fresh ground black pepper.

Absolut Mandarin – 1.5 oz
Orange Juice – 1 oz
Grapefruit Juice – .5 oz
Chile Serrano Slice
Sugar Rimmed Martini Glass

Mix Absolut Mandarin, orange juice, grapefruit juice in a martini shaker packed full of ice. Shake until the shaker “ices” over. Take your favorite chilled martini glass, rim the glass with sugar and add a Chile Serrano slice for garnish. Sip slowly and enjoy!

Wicky’s features a private dining room with a cascading glass waterfall and private patio overlooking the sparkling Caribbean sea. Wicky’s hosts a variety of romantic events from vow renewal dinners in private cabanas (debuting January, 2010), to private intimate dinners of 10-40 people to extravagant wedding reception affairs up to 150 inside the exclusive dining room, and over 500 people on their exclusive beachfront property.

Brides can choose from a variety of wedding ceremony sites that include a white sandy beach with magnificent sea views, or choose the private seaside terrace with two waterfalls facing the sea. The Taste of Playa celebrates the creativity and cultural influences of chefs throughout the area promoting unique culinary perspectives in the Riviera Maya. The event will take place from 2pm until 9pm at the Parque Fundadore in Playa del Carmen, overlooking the Caribbean sea. Over 35 celebrated chefs and restaurants will participate in the event offering the local community samplings of their favorite tastes and drinks. A portion of the proceeds from the Taste of Playa will be awarded to Ak Lu’um International School, a non-profit pirvate learning institution that integrates young students with physically and developmentally challenged children in a safe learning environment.
