Meet Chef Collin Kelley
COLLIN KELLEY APPOINTED EXECUTIVE CHEF AT WICKY’S

Playa del Carmen restaurant and real estate entrepreneurs announces Collin Kelley, as Executive Chef at Wicky’s Restaurant Playa del Carmen. Wicky’s Restaurant opens Summer, 2009, specializeing in prime USDA steaks, fresh market seafood and is located on the beach with spectacular views of the Caribbean in the Riviera Maya, Mexico.
While working at the acclaimed Ruth’s Chris Steakhouse and Del Frisco’s Steakhouse in Denver, he realized that his passion within the culinary world was to work in high-end steakhouses providing first class service. Kelley attended Johnson & Wales University, School of Culinary in Denver and interned in several restaurants in Denver, Kansas City and Milan, Italy.
“My goal as the Executive Chef of Wicky’s is to bring a unique approach to traditional American fare, that has not been seen or experienced yet in this region – focusing on the flavors, elegance, simplicity and freshness of ingredients,” stated Kelley. “It is my vision that Wicky’s will become internationally renowned as the finest dining experience in all of the Yucatan and Riviera Maya offering the best USDA prime steaks and seafood complemented with unsurpassed professional bilingual service to exceed our guests expectations.”
Wicky’s Restaurant Playa del Carmen opens in 2009 and specializes in USDA prime steaks and fresh market seafood. Breakfast, lunch and beach club experiences are offered during the day with a nightly dueling piano show for late night entertainment. Meetings, weddings and special events will also be hosted for groups of 10-350 people. As the restaurant is located at the base of the El Faro Lighthouse in Playa, the owners named the restaurant “Wicky’s” after lighthouse keepers who trimmed the “wicks” of the kerosene lamps to provide the light in the lighthouse.
